Wood-fired community ovens today in Minnesota, USA and in history

I became acquainted with David Cargo several years ago when I attended my first meeting of the very active St. Paul Bread Club. The setting was perfect: a brisk Saturday morning at the St. Agnes Bread Company in St. Paul. There must have been three dozen of us there from all across the Minneapolis/St. Paul metro area – young, older, many of us with flour-dusts on our sweaters, and others new to the wonderful world of crusty hearth breads. Tomatoes, green beans, and beef. Oh my!

It’s a bit after 9 pm, and I’m sitting in a 19ft camper parked just 300 feet from the house. It’s cosy and quiet, a terrific refuge from the toxic fumes that are a unfortunate by-product of the sealant applied to our cement floors. (We tried using a eco-friendly product last year, but it wore thru in under 12 months. I’m sure they’ll develop better products over time.)
