Celebrating my wife birthday last week we had dinner at Chez Colette at the Sofitel hotel in Bloomington.

During our recent trip to the Pacific Coast of Costa Rica and while staying at the Hilton Papagayo resort I had one of the best Dorado with a light butter caper sauce. It was served with small vegetables in a brochette style. Absolutely delicious. The name of the restaurant was Pacific Club.
