Minneapolis: Chef Shack coming to Seward
The building that has sat looking forlorn at the end of Franklin Avenue in Seward has actually been occupied since August. The tenant? Chef Shack. Co-owners Carrie Summer and Lisa Carlson have been quietly working behind the papered windows to transform the space into their newest brick and mortar venture – Chef Shack Ranch.
It will be a “modern urban truck stop,” Summer told the Star Tribune. The Ranch will serve up pulled pork, brisket, beef cheeks, beef tongue, bison burger, meat loaf and other meat-centric dishes as well as their hand-cut fries and doughnuts for dessert.
“We’ll do everything you think of when you think truck stop food,” Summer explained to Minneapolis/St. Paul magazine. “The biscuits, the mashed potatoes, biscuits and gravy, pies and cakes, ice cream—but all of it a little more urban and healthier.”
Chef Shack will still operate food trucks throughout the cities as well as the restaurant in Bay City. In fact, the kitchen in the Franklin location will provide enough room to serve food for the Ranch and the fleet of Chef Shack trucks.
Summer and Carlson expect to open the new space to diners this December or January and have service Thursday-Sunday. A patio and walk-up takeout window are planned for next spring.
Chef Shack Ranch will be located at 3025 E. Franklin Ave.
