Minnesota State Fair: 40 new foods — and one you won't believe

Lamb Fries served at the Minnesota State Fair are the new “dare you” food item for 2012. Chevy Chase in Funny Farm couldn’t get enough lamb fries, until he found out what the fries were made of: lamb testicles.

Online cooking videos demonstrating how to prepare the testicle delicacy are, well, nerve-wracking. But the video chefs seem to take it in stride; it is food, after all. If everyone attending the State Fair had one Lamb Fry dish, that’s a lot neutered lambs grazing the land.

Lamb Fries are a traditional Middle Eastern dish and the State Fair testicles are marinated with Holy Land spices. Fair goers can choose from deep fried in a crumb coating with traditional dill sauce or grilled with sautéed onions. Served at Holy Land Deli, International Bazaar.

A record 40 new food items are at the 2012 Minnesota Great Get-Together. Here is the list, to check off as you visit the Fair.

Is the best part of your cereal the stuff at the bottom of your bowl? Now rejoice with the taste of Cereal Killer Ice Cream: soft ice cream that tastes just like the milk left at the bottom of your cereal bowl. It’s topped with dry cereal and a little milk creeping up the sides. Featuring two flavors—one sweet and chocolatey and one honey and nutty. Served at Blue Moon Dine-In Theater.

Aug. 31-Sept.3, Camel Burger Sliders will be served: camel meat spiced and served with tomato, white American cheese, spicy mayo and onions. Safari Express—Taste of Midtown Global Market, International Bazaar.

Wine Smoothies: at Minnesota Wine Country. A mushroom bar or antipasto plate will feed you while you sip. Located on Underwood St. across from the Agricuture Horticulture Building (old church hall).

Think of gravy when thinking of mashed potatoes? Not at the Minnesota State Fair, with new food item Sweetie's Delights - Mashed sweet potatoes on-a-stick, lightly battered and dusted with powdered sugar. Served with a side of whipped cream. At Mr. Potato & Sweetie, located on Liggett Street on the east side of the Horse Barn.

Gluten-Free Food Items:

Gluten-Free Chicago-Style or State Fair-Style Hot Dog - Quarter-pound 100% all-beef frankfurter served on an Udi's classic gluten-free hot dog bun in your choice of Chicago-Style or State Fair-Style hot dog. The Chicago-Style hot dog is topped with brown mustard, diced onions, green relish, diced tomatoes, sliced cucumbers, sport peppers, a dill pickle spear and a dash of celery salt. The State Fair-Style hot dog is prepared with condiments of your choice. At Chicago Dogs, located in The Garden, on the corner of Dan Patch Avenue and Underwood Street.

Gluten-Free Risotto Poppers - Arborio rice balls with black beans, cheese, scallions and spices, hand-rolled and dipped in tapioca flour and egg wash, then dipped in gluten-free crushed corn tortilla chips. At French Meadow Bakery, located on Carnes Avenue, between Nelson and Underwood streets.

Alere's Featured Salads - Asian Salad - Romaine lettuce, fresh parsley, Mandarin orange slices, sliced almonds, sesame seeds, feta cheese and croutons with choice of Asian vinaigrette or raspberry balsamic vinaigrette dressing. Classic Tossed Salad - Romaine lettuce, cherry tomatoes, pecans, dried cherry/cranberries, olives, feta cheese and croutons with raspberry balsamic vinaigrette dressing. Garden Salad - Mixed greens, cherry tomatoes and croutons, with choice of ranch, French or raspberry balsamic vinaigrette dressing. At Veggie Pie, located in the Food Building

Bacon Ice Cream - Real cooked and candied bacon in ice cream with a hint of maple flavor. Beef Tongue Caramelos (Tacos) (Available Aug. 27–30) - Served with chipotle salsa, cilantro vinaigrette, sautéed onions, cabbage and jalapeno. At Sonora Grill* (new vendor) – Taste of Midtown Global Market, located in the International Bazaar

Breakfast Sliders - Trio of sliders (steak, Cajun sausage and ham) served with scrambled eggs, homemade garlic mayo and topped with cheese and green onions. At Ragin Cajun, located in The Garden, on the corner of Dan Patch Avenue and Underwood Street

Cheeseburger Sticks - Hamburger, American cheese, pickles and a secret sauce wrapped up in fresh-baked pizza dough and served with pickles and dipping sauce. At Green Mill, located west of the Family Fair Stage in Baldwin Park

Chicken Nachos On-a-Stick - Skewered chicken breast with corn chips, nacho cheese, pico de gallo and jalapenos. At Tejas, located in The Garden, on the corner of Dan Patch Avenue and Underwood Street

Chocolate Peanut Butter Cup Fudge Puppies - Crushed peanut butter cups baked in the middle of a Fudge Puppy that is dipped in chocolate, layered with whipped cream and a custom-made peanut sauce. At Granny's Kitchen Fudge Puppies, located on the outside west wall of the Food Building

Classic Walleye Roll - Fresh walleye, served chilled "New England-style" with Minnesota wild rice and minced celery. Minnesota Wine Bistro Menu - Grilled Portobello Mushroom Bar - Grilled sourdough toast brushed with creamy roasted garlic sauce, topped with aged romano and parmesan cheeses and a slice of Portobello served warm from the grill; Antipasto Plate - Featuring Minnesota bison sausage, assorted cheeses, roasted peppers and sliced baguettes; and Wine Smoothies At Minnesota Wine Bistro (new location), located on Underwood Street (the former Epiphany Church Diner)

    Walleye =/= Vegetarian

    Vegetarianism means you don't eat meat, so the walleye roll would be a terrible vegetarian choice.  Good for pescatarians though (people that don't eat red meat or poultry but do eat seafood).

    I can't wait to try some of these bizarre creations!  Hey, just a note on a small mistake - the photo of the Walleye Roll is mistakenly identified as "vegetarian" - but vegetarians, by definition, don't eat meat, including fish!  (Some people do identify themselves as "pescatarian," meaning people who eat fish but not red meat- this would definitely be the crowd for the Walleye Roll.).

    Slipery Slope!

    Yes, it's a slippery slope with vegetarian definition. Some vegetarians I know do eat fish, some do not. I guess it is a self-declared lifestyle. Vegans, on the other hand, do not eat fish, butter, etc. I went by personal acquaintances who say they are vegetarian but eat salmon, walleye, eggs etc. but no meat or meat by-products. So I felt OK with the Walleye sandwich definition. I had not heard the term "pescatarian." Thanks for the tip!

    the true definition of a vegetarian is one who doesnt eat meat- of any kind- i think the whole "fish friday" during lent is where midwesterners get their wires crossed and think that fish flesh is somehow vegetarian
