Grass fed beef is the specialty at "Farm on Wheels", a family run farm in Kenyon, MN. Linda, Mike and Dillon Noble have been selling their beef at the St. Paul Farmers' market for over twelve years. In this episode, Linda Noble gives a tour of their family farm to SPNN's Market host Jill Jones and talks about the health benefits of eating beef raised in this natural way.
- We just bought a chicken from Farm on Wheels at the Farmers' market yesterday. I thawed it, marinated it in Jerk Sauce, baked it for 30 minutes at 350 and my husband finished it on the grill. As we ate it for dinner, my husband, son and I all commented that it tasted good but was much firmer than other chicken we had had. We joked about how it was "buff and tough" , or maybe it wasn't raised truly free and was just rolling around in a cage on wheels. The large chicken cost $15 so I decided to call the farm and talk about our impressions. I spoke to one of the male members of the farm (sorry, I didn't get the name) as he was driving to fix something. He pulled over and we talked for half an hour. First, I realized that these chickens are, indeed, firmer muscled because of their truly open field upbringing. Second, I became educated about the completely different kind of FAT that grass fed, free-range animals produce and how GOOD it is for us. CLA: conjugated linoleic acid. This is the new super food, which like so many, is simply the result of putting animals back in a more healthy environment. I won't go on to list all the benefits of this. You can google as well as I, but I do want to go on record as saying that I was most impressed with the knowledge I gained and the commitment of these farmers to producing healthy food.
