Dorado Brochette

During our recent trip to the Pacific Coast of Costa Rica and while staying at the Hilton Papagayo resort I had one of the best Dorado with a light butter caper sauce. It was served with small vegetables in a brochette style. Absolutely delicious. The name of the restaurant was Pacific Club. The Dorado is a local fish and I certainly recommend you try it if you travel in this part of the world.
