Friday night should always be Flamingo night

I love East African food so much that it is a problem. I don’t know when to quit, and I’ll just keep mopping up sauce with injera until I can’t walk. I acknowledge my problem, and sadly this has meant limiting my consumption. Flamingo Restaurant, which opened up recently on 490 Syndicate, has not made things easier for me as it is incredible food.

First thing you should do is listen to this really interesting MPR story about the owners. They are both refugees, from the oft-warring countries of Eritrea and Ethiopia respectively. Like most refugee stories it is humbling, and makes you realize quickly how amazingly simple and easy most of our lives are.

Friday night tends to be a pizza night at our house, but thankfully my wife called at 5:00pm with the exciting news that tonight she would be bringing home Flamingo. Just to ensure that the little ones wouldn’t kill the vibe, I did still order an emergency pepperoni pizza (good decision). The kids missed out. The beef was crazy tender, and the chicken fell off the bone. The sauce is hard to describe; it is really neither spicy nor sweet. It’s just crazy good. We split one dish and that was more than enough.
